Southwestern Chicken Burger

Burgers are good…really good. They are the kind of quick dinner that never seems like a cop out.  I can spend 30 minutes cooking dinner and everyone is thrilled.  We like to eat all kinds of burgers, experimenting with different types of meat: beef, pork, chicken, or turkey, and  many different flavor combinations.  When cooking up burgers with chicken or turkey, I mix in egg, bread crumbs, and herbs, all which help keep the burgers moist.   This burger recipe is one of our favorites.

Southwestern Chicken Burgers are super moist and flavorful.  The mild taste of the ground chicken allows the garlic, cilantro, green onion, and spices to do their magic.  This burger is packed with flavor and is sure to delight even the most die-hard beef burger fans. Layer the toasted buns with spicy, smokey chipotle mayonnaise and Caramelized Onion Relish. If you don’t have a grill, these burgers would be equally tasty cooked up in a skillet with a little olive oil.


Southwestern Chicken Burger

makes 4 burgers

1 pound ground chicken

2/3 cup panko

1 egg

1/4 cup minced cilantro

3 thinly sliced green onions

1 teaspoon cumin

1 teaspoon chili powder

1 clove of garlic, minced

1 teaspoon salt

4 hamburger buns

Caramelized Onion Relish (click here for recipe)

Mix all ingredients thoroughly.  Form mixture into 4 equal-sized patties.  Cover and chill for 20 minutes to 4 hours.

Heat grill on medium-high heat.  Lightly oil the grates.  Grill burgers on medium-high heat for 3-4 minutes per side until cooked through.  Grill buns until toasted.

Serve burgers with Chipotle Mayonnaise and Caramelized Onion Relish.

Chipotle Mayonnaise

1/2 cup good quality mayonnaise

1-2 chipotle chiles, minced

1 tablespoon adobo sauce

1 clove of garlic, minced

zest of one lime

1 tablespoon lime juice

1/4 teaspoon salt

Mix all ingredients.  Season to taste with salt.  If you prefer a perfectly smooth mayo, process in the blender. Can be made one day in advance.

    PS: I might try substituting the mayo with Greek Yogurt for a slightly healthier kick. Can’t wait

      Yes, I’m loving Greek yogurt these days. I would use Greek yogurt for the bulk and add a Tablespoon of regular mayo for richness and flavor.

    I am Lesley’s sister. I made these burgers last night and followed the recipe almost exactly…they were AMAZING!! I substituted greek yogurt for mayo and ground turkey for ground chicken (my grocery store was out of chicken). I peeled and cut up some sweet potatoes and tossed them with fresh minced ginger, cardamom, honey, and pepper and baked them as a side dish – the flavors were very complimentary and a huge hit! My husband began dipping his sweet potatoes in the chipotle spread. This recipe is a keeper in my house. Thanks so much for sharing!!
